How to Cook Mutton Biryani (Seeraga Samba Biryani)

Ingredients:
- 500 grams mutton, cleaned and cut into pieces
- 2 cups Seeraga Samba rice (or any other short-grain rice)
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1/2 cup yogurt
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- 1/4 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon biryani masala powder
- 1/2 teaspoon garam masala powder
- Whole spices (2-inch cinnamon stick, 4 cloves, 4 green cardamoms, 2 bay leaves)
- 2 tablespoons ghee (clarified butter)
- 3 tablespoons Anjali Sesame Oil
- Salt
- Water
Preparation:
1. Wash the Seeraga Samba rice thoroughly and soak it in water for 30 minutes. Drain the water and set aside.
2. In a small bowl, marinate the mutton with yogurt, ginger-garlic paste, turmeric powder, red chili powder, biryani masala powder, and salt. Allow it to marinate for at least 1 hour.
Procedure:
1. Heat the ghee and Anjali Sesame Oil in a pressure cooker over medium heat.
2. Add the whole spices (cinnamon stick, cloves, cardamoms, bay leaves) and sauté for a minute until fragrant.
3. Add the sliced onions and sauté until they turn golden brown.
4. Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and mushy.
5. Add the marinated mutton pieces and cook for about 5 minutes, stirring occasionally.
6. Add the chopped mint leaves and coriander leaves. Mix well.
7. Add the soaked and drained rice to the cooker and gently stir to combine everything.
8. Add enough water to cook the rice (approximately 3.5 cups of water for 2 cups of rice). Adjust the salt if needed.
9. Close the pressure cooker with its lid and cook for 2 whistles on high heat.
10. Reduce the heat to low and cook for another 10 minutes.
11. Turn off the heat and let the pressure release naturally.
12. Once the pressure is released, open the cooker and fluff the rice gently with a fork.
13. Serve the flavorful Mutton Seeraga Samba Biryani hot with raita or salan.
